Extruding with fresh meat and ensuring food safety: how to achieve both goals – The pet food market has experienced an increased demand for fresh meat inclusion in extruded products. At the same time, there is strong focus on food safety driven by well-being of the final consumer, increased governmental requirements and protection of pet food brands. When it comes to fresh meat, pasteurization is not sufficient if spore-building bacteria are present. Stoffner shows possible solutions from the processing point of view and how to validate such a process.

Experience:

Stoffner is responsible for the animal nutrition segment within Bühler’s nutrition business unit.  He studied food technology at Zurich University of Applied Sciences, Wädenswil. After several years of quality management and process development in the meat processing industry, he joined Bühler as a junior process engineer in application technology with a general focus on the pet food and aquatic feed markets, then assumed responsibility for the technology and startup group after three years. Based on his broad knowledge of extrusion processes, pet food and aqua feed products, quality and plant performance, Stoffner regularly gives presentations at technical sales events and extrusion courses worldwide, including the Norwegian University of Life Sciences, University of Nottingham and Aqua Feed Horizon.
